Although it's not quite as friendly as the offline monster builder yet, I would highly recommend the tool in the following thread.

I've used it for a few weeks now, and it's pretty slick.
It will grab monsters/items/powers directly from DDI (requires a login) and let you edit/print them in a very easy to use format.
