Reading Fast Food Nation and in Chapter 8 there's an account of how meatpackers wear chain mail to protect themselves from the knives.

It is made of a light plastic. TLC had a show on body armor not that long ago. Due to high tech plastics and ceramics you are starting to see mail and plate make a come back.

They have a plastic/ceramic breast plate that spreads out the energy of a bullet, so you do not have blunt impact damage.
