I personally rule that the horse needs to be maintained like any other horse. Food and appropriate rest are important. It's effectively the old 2nd Edition Paladin Warhorse as an option for players who want that, but without it being a full-blown class ability that often doesn't get used. When the horse disappears, any extra stuff that didn't come with it in the first place just drops to the ground.
