At the paladin’s option, she may have any spell (but not any spell-like ability) she casts on herself also affect her mount.

This seems to imply that if the mount casts a spell the mount does not have the same option of affecting the paladin?

For that matter how do mounts with no hands(such as a celestial charger) cast spells with somatic components?

IMO all spells cast by the mount are supposed treated like spell like abilities that require no somatic or material components.
