if a monstrous spider hit a creature multiple times is that creature affected with poison every time? does the damage from poison stack? can the creatures strength reduce to 0 and die from this same type of poison?

A house rule I use (for example, with paralysis) is that if the next hit incurs a greater penalty duration than is currently active, the longer duration takes effect (rather than combining them together).

So someone who has been affected by fear that lasts 3 rounds can still be affected by fear if the new affliction lasts longer than 3 rounds, in which case the new longer duration applies.

As frankthedm says: affects each time if fail save.
Damage always stacks.
Str 0 is helpless but you don't die. Con 0 causes death. The rest make you helpless (Mental 0 is comatose).

Yes, you have to save with each hit, and you can end up making a ton of saves. Ability damage stacks just like hit point damage does. However, others have correctly noted that only con damage is technically lethal; any other ability reduced to 0 results in paralysis (however, this is an easy coup de grace if the enemy is still around).
