Negative Energy Elementals (and Fundamentals) were in the 2E Return to the Tomb of Horrors boxed set. There has never been a listing for Positive Energy Elementals (or Fundamentals).

It's worth noting that, IIRC, the later Planescape product, The Inner Planes, had an in-character notation about Negative Energy Elementals, saying they weren't true elementals, and were more like constructs of pure negative energy.
 

Funny you should mention the energy elementals. I have done both of them for a future Necromancer Games product (likely Tome 3). :)
 

Something I'm looking into using are the Luminous from Legends and Lairs "Mythic Races". They are humanoids made of pure positive energy.
Not sure if that will help but may give you some ideas.

pages 67-72 Mythic Races
+2 Wisdom, -2 Cha (Wise but uncomfortable away from their society)
Med Size
Poison Immunity (non-magical only)
+4 on all saves vs. necromantic spells/powers
Unique Anatomy- Allows glow to level of candlelight. Can dim at Fort DC of 15 for # rds per Con Ability
Enhanced Turning +2 caster level when turning undead
Languages: Common and Lumin (theirs)
Favored Class: Paladin

I would add in N or G alignments only but that's just me.

Authors suggested negative versions exist. I would guess just reverseing the benefits.
