what is happening in the "Abandoned Quarry" (NE of Red Larch)?

I cannot find any References to the Landmark in the Book...

It's not used in the adventure. Probably left over from an earlier draft. Quarries in the hills are mentioned a few times (page 21, 27, 36) but there is no specific description.

I suspected something like that, but I didn't wanted to use it for something else and later find out that it is important.

It would be a good set piece battle arena with bullette riders exploding from the dirt.

The PCs receive a mystery note.

"Meet me at the abandoned quarry outside of town. I have information you need."

And cue......Ambush.

I already planned a Orc Ambush there (Random Encounter) with their back on massive slope downwards (not steep enough to kill them outright) and their cart on the way to it since the horse is panicking...

But the Bullete is a great Idea, which I will not fight itself (it's already a hard Encounter), but it diggs close to the surface, which makes it hard to keep standing.
