Prison breakout help

I have had several problems starting this campaign but I have come up with a good way of starting it but it requires a Prison break, the party escape with several NPC commoners and come across others during the quest which they can choose to free or leave, at the end they can choose to help the first group they helped free (which they were part of) or abandon them to the Boss and escape without a fight.

Now for the problems, I have never ran a Prison break-esque adventure and I have no idea what to have in the prison besides a lot of small rooms with prisoners and a Torture chamber (which, TtheWriter* suggests should be avoided in games and I don't know whether to include that or not), I don't want the adventure to be combat heavy but there would be guards wandering about the prison, or it wouldn't be a very good prison, and some sort of security but easily picked locks or keys on guards can fix that.

Any ideas/suggestions from DMs or players who have experience with Prison breaks would be helpful (especially if they are D&D prison breaks ;)

EDIT: I am playing 3.5 if that matters (the system we use has several small HRs but Bloodied/Skill Challenges fit quite nicely)
