Well, assuming that you have the expanded psionics handbook and so are talking about the psionic classes as depicted there, I will say that the Psion needs intelligence. Any race that has a bonus to INT would therefore help here. (The Blue (a type of psionic goblin), described in the back of the book, is an example). But human, with that extra feat, is also a strong choice, particularly with the access to the special psionic feats (for instance, a human psion at 1st level could take the feat Psionic Talent three times and get 2 +3 +4 bonus points, and so could start at 1st level with an astonishing 11 power points before the int bonus is factored in!
For Wilder, Chr is the main attraction. Any race that helps with Chr. Again, human is awesome here.
For Psychic Warrior, there are many strong candidates. Although Wis is the stat governing psionics, str, con, and to some extent dex are good for killing things and staying alive. Again, human is good. Half-orc is also good, since its penalties are to abilities that are not that important to a psychic warrior.
For SoulKnife, str, con and dex are important. So the usual susepts, dwarf, half-orc, human, are all strong candidates.
The psionic races described in the book are not that stupendous, once you factor in the level adjustment for most of them. The ones that don't: Elan, Maenad, Xeph, are interesting, though, and might be worth a look.
Hope helps.
