Psionically powered non psionic classed characters?

My understanding of Psionic Shot is that it only works for a single shot, not the whole round. In this sense, Psionic Meditation works well if the enemies can't get to you and force you to move. Thus, you single shot and use your move action to regain your focus. If you can, do it in that order. That way you have your focus before spending actions in the next round.

Having had psionic shot with a psionic character, you are right, it is only one attack. However getting psionic meditation was a plus to using it every round. Of course I was using a light crossbow which onely allowed one attack. I rarely used it after 7th level when my character became a cerebremancer.

My favorite use of (Greater) Psionic Shot was in conjunction with crystal shard. Suddenly, plinking away for 1 power point each round isn't totally useless. :) It's a hefty investment of feats, but for the price, you get nice staying power -- an area that Psions are usually lacking.

Or you can take a warlock with already great staying power, and add Greater Psionic Shot to his eldritch blast. ;)
So, does that mean that any character can take the Wild Talent Feat, gaining 2 power points, and then be able to take psionic feats, without the need to actually take a class that uses psionic powers?
Yes, that's really the only point of the feat. It even states in the feat description that: As a psionic character, you gain a reserve of 2 power points and can take psionic feats, metapsionic feats, and psionic item creation feats.

Or.. Avoid the Wild Talent feat and just make your PC a psionic race. One PC I play with has Up the Walls as her level 1 feat. She has gotten out of so many mobility issues with that.

Wild Talent is actually the kosher route to Fist of Zuokon. Warmind could go either way, but I think favors the psionic fighter over the psychic warrior.
