Publishing Questions For 3.5e Compilations

The issue is with their other books, such as their Races of Stone and Races of the Dragon, which I'm not sure are covered under the SRD...? I was looking specifically for mechanics for mining stone and ore, and using the Profession (Miner) they have in those.
Unfortunately, those books were not published under the OGL. 🙁 They both say:
This WIZARDS OF THE COAST® game product contains no Open Game Content. No portion of this work may be reproduced in any form without written permission.
So you can't copy stuff from those books without permission. It's mainly the core rules that WOTC published under an open license.

To be clear, none of WotC's Races of books have any of their content in the SRD (and while WotC has a very small number of other books with Open Game Content in them, those being two OGC monsters in the Monster Manual II and most of the text in Unearthed Arcana, the Races of books have no OGC).

As for a Knowledge check related to medicine...presuming that you don't want to introduce a new skill, my recommendation would be that for any given creature, the Knowledge check to know about medicine as it relates to that creature is the same Knowledge check you'd make to identify them. So if you wanted to know about medicine as it relates to animals, that'd be Knowledge (nature), whereas humanoids would be Knowledge (local), and dragons are Knowledge (arcana), etc. It's not necessarily a perfect solution, but it should serve well enough, and makes it so that you don't have a single skill representing medical knowledge of all the disparate creatures in existence.

Yeah, and they have a skeleton of mechanics to deal with mining, just enough to muck things up. There's no supplements, either, which means this would likely make a unique hit on DTRPG if anyone wants to take a crack at it...lol

Yeah, that sounds simpler, I think, and leave the medicine aspect to the Heal skill. Appreciate it!

Ignore the books. Get the SRD. That's what you can use. If you're publishing something, pretend the books don't exist. The only thing that matters is the SRD.
