Level Up (A5E) Quick question about heralds and paladin subclasses

IMO the main upside of adding a school to your spell list is extensibility: if a new supplement comes out with a spell from that school, you can start casting it right away (unless the DM prohibits it for a very good reason). Having 2 specific spells prepared gives more moment to moment freedom, but less variety and no automatic extensibility

i let my warlock player have all his pact spells always prepared and i didn't notice any balance issues with it.
Agreed. It is fine for game balance. D&D 2024 does the same thing by the rules as written (RAW) for Warlock. In D&D 2024, Warlock archetypes get 2 additional spells from spells level 1 to 5 on their prepared spell list depending on their patron.
