Reconstituting Paints

Just started painting minis again and I have a number of paints that have dried up (some completely, some to a consistency much to thick).

Anybody know a good way to recover them? Most I can replace but I have a few that I've never seen anywhere since I bought them.

If they're water based, usually a little water will do the trick. I'm sure there's a better substance to use, but plain old H2O always works for me.
