I like cobbling together pieces of different modules as needed. There is a really cool adventure for Ravenloft called Castles Forlorn. Not only does it have a cool castle in three different time periods with a monster who is different depending on the era, but it also includes a bunch of, I am not sure what you would call them, but just a bunch of scenarios and encounters that you can use.
