Running a Casino/Restaraunt

I just downloaded Tournies, fairs and Taverns. There are some great rules for PCs on gambling and bar games.

Does anyone know of rules on the running of a Casino?
A restaurant?

Profit/Loss etc.

My gnome character is getting the "Bugsy Malone" itch again.

I set up some basic guidelines when this happend in a game a few years back. The base price was dependant on the local economy, size of the city, and how much the character put into the endevour. Then I had some random rolls each month of game time to determine actual amounts. It really depends on how much detail you want to go into.
 

I've kinda got the impression from some of the stuff they have said there might be really basic rules for this in stonghold builder's guidebook. I know there was a Game room for a Casino in the latest Dragon.
 

Hmm. I never considered writing rules for PCs actually running their own casinos or taverns. Sounds like something to add in the print version.
