Right-click on the taskbar. Select properties. Unclick "Group similar taskbar buttons." Then, if you really want, move the cursor over the upper edge of the taskbar so it looks like a two-directional arrow, then click and drag up so the taskbar is two rows high instead of one. If you find yourself occasionally accidentally clicking and dragging the taskbar to a different size, you can also rightclick on the taskbar and select "Lock the Taskbar."

Oh yeah - and Autohide the taskbar is on there too. I forget why I turned that off - I think it had something to do with it causing some problems/conflicts with some program or other.
 

A virtual desktop would solve the problem, but that is not always feasible at work since you may not have access to install it.
