If it has High AC as a level 5, just give it the High AC value for level 10 if you want to make it stronger like that. It's not perfect, since there's abilities that don't rely on numbers that'd be broken if they're scaled up or down, but I've found that it works alright most of the time, and there's some online tools that adjust the statblock for you with<a href="https://i.imgur.com/p8f0KOE.png" target="_blank"> just a slide. </a>I think I saw something like that for 5e once, but I couldn't find it again.
