Well, “unicorn” is straight Latin for one horned. So Equus unicorn would be fine.

Pegasus was actually a proper name- Pegasos in Latin translations of the legend- but Equus Pinnula would work for winged horse.

Using the genus name for ivy, razor vine could be Hedera rado. If you prefer to use a different kind of vine, look it up on Wikipedia, and they will list the genus name.

What do you mean by “human” giant?
Is the Eqius of machanus a construct? If so, it wouldn’t really need or have a scientific name.
How is the Kraken statted? I don’t have it in front of me, so I don’t know its creature type, etc.

The 9-10 foot tall giant from the 2nd edition monster manual & no on the 2nd question, the machanus equis isn’t a construct.
The kraken is somewhat like a giant squid,but bigger and sentient.

Are you sure it was called a human giant? Because I have zero recollection of that.

I know the kraken is a larger, smarter squid, but did it have anything else? Was it just a magical beast, or was it demonic, etc?

And what sets the Equis apart? How is it different from other equines?

No, the “human” giant wasn’t called that, the equis were horses from the outer planes & I think the kraken was a magical beast (again I think)
