Sculpt Spell - when do I choose shape?

When do you "sculpt"?

I would say that you decide the area of the sculpted spell at the time of casting, because I think of the Feat not as "preparing a spell with a weird area" but "preparing the spell with the ability to change the area."

Think of it as adding the (S) descriptor (shapeable) to the entry for Area or Effect of a spell. These spells are shaped when cast, not when prepared (if my understanding is correct).

From the SRD:
-----
(S) Shapeable: If an Area or Effect entry ends with "(S)," the character can shape the spell. A shaped effect or area can have no dimension smaller than 10 feet. Many effects or areas are given as cubes to make it easy to model irregular shapes. Three-dimensional volumes are most often needed to define aerial or underwater effects and areas.
