Including the Core 3 what 4 other books would you pick if you could only have 7?
Lets change up the question- What seven books would you pick if you could only pick 7? This includes settings and core rules.

1.

Still...can't...do it.

[Wipes off beads of sweat and looks again at the window]

Well...

Keeping to D&D then:

The Core three
Libris Mortis
Draconomicon
EPH
Complete Adventurer

Outside D&D:

Mekton Zeta
Mekton Zeta Plus
Mutants and Masterminds 2
D20 Modern
Darwin's World 2
Talislanta
Cyberpunk 2020

Okay - changed list
1. Conan RPG
2. Castles & Crusades PHB
3. Castles & Crusades Monsters & Treasure
4. CSIO
5. Wilderlands Boxed Set
6. Tome of Horrors II
7. Paranoia

I find the 3.5 DMG fairly useless. Mine is in storage, and I never seem to find myself wanting to look for anything in it. So I can live without it.

My list is always in flux, but this is the list as of today...

That said, I'd probably want:

3.5 PHB
3.5 MM
C&C PHB
Tome of Horrors
Wilderlands of High Fantasy Boxed Set
Unearthed Arcana
Artificer's Handbook

Hmm. Let's try these...

Sovelier/Sage SRD (printed and bound if you insist)
Ken Hood's Grim-n-Gritty ver 4.0
Elements of Magic Revised
The Immortal's Handbook
Draconomicon
Book of Templates
Book of Fiends
MMII or III

I've put them more or less in the order of importance as I see it. This is also the order of most used books to less used in my game. The various "Complete" books are also occasionally used, but not by me. My players will pull them out and ask if they can use X or Y class. Personally, I don't need them.

I am assuming this is "for my D20/D&D needs only
