Pathfinder 1E Sometimes pathfinder confuses me.

For the most part, PF didn't change much about the monsters (except when class abilities changed, see smite evil), but it changed more in the underlying rules system - in particular, jettisoning Level Adjustment, instead tying it into CR.

Which is why I'm now wondering if +2 would be fair for a version w/o spells.

One of the lovely things about house-ruling is that you can adjust if things become a problem. Even more than the spells, I think the Damage Reduction may become an issue, but really the best way to test this is in play. :)

It's just my way of thinking, but I don't see a point to the template without the spells. It's pretty much the same thing as the fiendish/celestial templates but with stat boosts.

And flying, stat boosts, a variety of resistances and natural attacks. The spells all come with being a cleric. So, if you want a bunch of cool holy/unholy themed spells, roll a cleric. If you want to be a fighter who casts cool unholy/holy spells, roll a paladin. My monsters/NPCs don't need specific spell lists since I don't use 3.5's model for building them.

The "feindish" or "celestial" templates are basically watered down aasimirs or tieflings with a LA.

I think you are confusing LA and CR. As was pointed out, the CR actually goes up as the monster gains more HD, but this in no way effects players since players don't have CR, they go by levels. The LA has not changed, it is +4.

This is the same in Pathfinder as D&D 3.5, so not sure why Pathfinder confuses you and 3.5 doesn't, but it is basically the same CR and LA as before.
