I don’t have my DMG in front of me, and this info isn’t in the SDR… so, quick question: at what level would a paladin be able to get a hippogriff as a mount. I seem to recall thinking it was only 6th level. Can anyone confirm?

Yes. DMG pg. 204 says that a paladin can get a hippogriff at 6th lvl.
