The 3.0 book Tome And Blood has a spell called Gaze Screen, which basically gives a 50% chance of gaze attacks failing to affect the caster. Unfortunately, I don't think there's any superior spell in 3rd Edition; but, as another poster mentioned, there's a psionic power in 3rd Edition that protects fully against gaze attacks (and it's a 1st-level power!). It belongs to the Clairsentience discipline, and called Steadfast Gaze. Dunno whether or not it's a Seer-only power in 3.5, but in 3.0 there isn't an such restriction, and it had a cool picture of a gnomish psion staring a (surprised-looking, I believe) medusa in the face from just a few feet away, the gnome's eyes glowing as he grins.
