Sounded awesome. Haven't had any time to look into mechanics myself, though.
That could work. I think it wouldn't effectively replace create food and water--how often is it that you find yourself with no access to food but with plenty of incense, candles, and other ritual accoutrements?--but otherwise it sounds like a great idea.

Maybe a mix of that with Turn Undead / Divine Channeling (like every "class feature disguised as spell" requires spending your turn attempts), and also giving clerics more deity specific powers, like GreatLemur mentioned. Only then you move to full spontenous casting.
