For your classic spy type that relies on social and technical skill...

Start with Noble 1 (for skills, the free Linguist feat, and the Connections talent), then go Scoundrel from there on out. Fool's luck and Knack are very useful to a skill-based character, the piloting talents help you get away, and between the Slicer tree and the Outlaw Tech tree you should be able to make a pretty high-grade hacker.
 

I'm assuming its a non force sensitive/jedi; because if so then Farseeing and Force Haze should be your prioritites.

Anyhow, I would say start as scoundrel to get the skills (stealth and all) as well as some scoundrel talents. Take scout for the movement talents and the awareness talents.
 

Non-Jedi, but Force Sensitive may be a possibility.

What I aim at is more of an infiltrator than a hacker. Get in, get the job done, get out.

Yeah, but is the job 'get some information' -- in which case social abilities and/or computer abilities are paramount and you'll want somehting along the lines of the noble/scoundrel I proposed, or steal something / kill someone -- in which case stealth and combat abilities are paramount and you'll want something along the lines of the scoundrel / scout Sitara proposed (probably going Bounty Hunter).
 

My suggestion would be starting as a Scoundrel (for the skills, plus you can snag sneak attack), taking three levels of Scout (for Hidden Movement and Improved Stealth), two more levels of Scoundrel (for sneak attack again), and one level in Soldier. From there you become an Elite Trooper.

Don't you need Bab +7 for Elite Trooper, not just 7 heroic levels.

Oh, right, good catch. Add one more level each of Scoundrel and Scout, then. Two more feats, and no damage in the BAB department.
