If the creatures wander out of the spell range, do they simply disapear? Or is the range only relevant when the spell is cast. I can see both arguements, but I want to hear your interpretations.

It specifically says in the PHB that summoned creatures must appear within the range, but can go beyond the range after they are summoned. It's in the magic section under "Conjuration."
 

I'll have to look at that when I get home. My GM was running it they couldn't leave the controlled area.

The quote Brother MacLaren was referencing:

A creature or object brought into being or transported to your location by a conjuration spell cannot appear inside another creature or object, nor can it appear floating in an empty space. It must arrive in an open location on a surface capable of supporting it. The creature or object must appear within the spell’s range, but it does not have to remain within the range.
