Someone watching might, with a very, very difficult sense motive check, figure this out. But if I, for example, added 6 tablespoons of water to the crust instead of four; if I kneaded the dough for a minute before rolling it out; if I did not thaw the frozen berries before baking the pie; if I added three times the amount of cinnamon as necessary; if I did any of these things, it wouldn't be a very difficult change for me to make, and I'm not going to be looking at you and licking my lips nervously while I do them. It may be a bluff, but it's a very subtle bluff.

Well, how subtle the bluff depends on the person. A nervous chef might decide to put not enough water into the crust and something like this might occur.
"One... two... thr--no, just two." or...
"... Oh, right, add more cinnamon"
Whether or not he says it, his actions might give this thought away. Whenever you're really good at something, you're used to doing it automatically. You have to think about messing up or straying from the routine.

If the chef is moderately good at Bluff, it might not be hard to do (a check of 10 or 15 isn't necessarily hard for a high level character to get, with few or no ranks, and also stands a decent chance of fooling a large number of people), but I wouldn't call it a P:Baker check.

No worries, though. Just so that we're on the same page.

When I DM I often have NPCs "taking 5" on spot and listen checks...like when the guards are supposed to be guarding but are instead playing cards.
