That allow you to choose different/extra class skills?

The Human Paragon can choose several skills of its choice and it also allows one to be chosen regardless what class you play later called 'adaptive learning'.

Are there any other feats etc. out there that can do much the same thing?

Or just talk to your DM, justify why the skill should be in the class list for your character, give something else up, and voila. It is suggested in the PHB that this is all fine and good after all.
 

Able Learner [Racial]

You have a great aptitude for learning
Prerequisites: Human or doppleganger
Benefit: All skill ranks cost 1 skill point for you to purchase, even if the skill is cross-class for you. The maximum number of ranks you can purchase in a cross-class skill remains the same.
This feat does not affect the skill point cost to learn a language or to gain literacy.
Normal: Cross-class skills cost 2 skill points per rank.
Special: This feat may only be taken at first level.

Cosmopolitan [General]

Benefit: Choose a non-restricted skill you do not have as a class skill. You gain a +2 bonus to all checks with that skill, and that skill is always considered a class skill for you.
Special: You may take this feat multiple times. Its effects do not stack. Each time you take this feat, it applies to a new skill.

Versatile [General]

You are skilled in a variety of areas normally outside your profession’s area of expertise.
Benefit: Select two cross-class skills. These skills are always considered class skills for you.
Special: This feat may be selected multiple times. Each time, it applies to different skills.

Cosmopolitan was updated in Players Guide to Faerun.

Now all it does is gives a +2 to bluff, gather info and sense motive checks.

The various apprentice feats in DMG 2 give 2 extra class skills. For example apprentice (spellcaster) gives use magic device and knowledge (pick one) as class skills.

There is also a feat in Unearthed Arcana that gives 2 additional class skills. I can't remember what its called, and from its context it may have been designed only for use in a non-standard game although it doesn't actually say this anywhere.

Guerrilla Warrior
Benefit: When you are wearing light or medium armor, reduce the armor check penalty of the armor by 1 (minimum 0).
Hide and Move Silently ranks cost 1 skill point, even if these skills are cross-class for you. The maximum number of ranks you can purchase in a cross-class skill remains the same.
Normal: If Hide and Move Silently are cross-class skills for you, each rank you purchase in those skills without having this feat cost 2 skill points.

Guerrilla Scout
Benefit: +1 initiative bonus.
Listen and Spot ranks cost 1 skill point, even if these skills are cross-class for you. The maximum number of ranks you can purchase in a cross-class skill remains the same.
Normal: If Listen and Spot are cross-class skills for you, each rank you purchase in those skills without having this feat cost 2 skill points.

Handy for getting into Rogue like Prestige Classes or if you took one level of Rogue, and want to keep improving those skill when you are a fighter with limited skill points. I think the initiative bonus of Guerrilla Scout is named but I can't recall what type it is. But doesn't remove the cross-class limit.
