Yes! This is possible with just newbie players, too. My current group were wowed and weirded out by an otyugh (or as they call it "Oscar the Garbage Monster"), while my previous groups would have complained that I always stick an otyugh in a garbage pile into this or that dungeon!

I also make heavy use of third party bestiaries. There's always a place for classic monsters - mixing things up makes both feel fresher.

100%. Its been awhile since I've played with people who knew the MM's that much but I've still seldom used any WotC MM's, and have opted for 5E Foes, Tome of Beast 1 & 2, Creature Codex and the Tome of Horrors in my 5E games. If nothing but to keep it interesting for myself.
