Reaper just released a Remorhaz titled the "Frost Wyrm" which could do as a Jabberwock in a pinch---if you're a twisted and vicious DM :D :

If you're looking for some good minis, the Jabberwock from Ral Partha (as sculpted by Tom Meier)
I have a really old (from the '80s) mini like that, either identical or its precursor. It's one of my favorite minis, even though the paint job I put on it as a 12-year-old was, uh, not so good.

As for the Jabberwock's motivation, it doesn't seem to have one in the poem.
Based on the poem, it may even be mindless, if you take "burbled" in its sense of "babble" and that in turn in its sense of meaningless sounds.

Oh, and I would definitely make it unique. Like the tarrasque.

Yeah, IronWind has the rights to a lot of Ral Partha's old catalog, so they're producing many classic RP minis these days.
