See this is what I don't understand, in what way did they dramatically change Starbuck's character? Lets look at both Starbucks:
Old BSG Starbuck: A fighter pilot, who is said to be one of the best pilots in the fleet. Does what he wants, smokes, drinks, gambles and jumps anything that stands still for more then 5 seconds.
New BSG Starbuck: A fighter pilot, who is said to be one of the best pilots in the fleet. Does what she wants, smokes, drinks, gambles and jumps anything that stands still for more then 5 seconds.
Don't get me wrong, when I first heard about Starbuck being a women I had that "what the hell are they thinking moment" but after watching I didn't really have an issue with it.
Personally I think the big problem is due to the whole casual sex thing, people still have an easier time accepting a man having multiple one night stands than a women. (Of course this is in general and as always, there are exceptions to the rule.)
