For me, it is all a matter of options with the classes, and the Ranger makes the ideal woodsman, especially if you use the non-spelling casting variant found in the Complete Warrior. Give him skills that a woodsman would have, take the archery combat style, and take Favored Enemy (Animal). I think the class has enough options available that it can be used to make an ideal woodsman character.

Otherwise, I agree with others that said to use the Expert class to create a hunter-style character.

I think the Barbarian Hunter variant from UA works well- especially when using the favored terrain variant (also from UA).

The kind of woodsman PC you describe could be built in Northern Crown by using the scout base class (not the same as the WotC scout) and the frontier legend prestige class. The frontier legend class was designed to give PCs access to Davy Crockett-like abilities regarding wilderness travel, orienteering, and survival.
