There's more than one way tp (Re)skin a monster

I've just about finished running our annual Halloween adventure. Themed, of course.

I found a lot of help straight from the Monster Manual, bu not directly.

Looking for Flying Monkeys I considered Half Fiend Dire Apes, bu settled instead for Harpys. I re-skinned them, of course, describing them as (naturally) flying monkeys.

Earlier I ran some Flesh Golem dressed up as very tall, cadaverously thin scarecrows. (take a look at the illustration in he MM. They really do look like oversized zombies.)

Part of the purpose, of course, is to make the players use the character's skills of Knowledge Dungeoneering, Knowledge Nature, Knowledge Arcana, etc, in place of the player's skills a Knowledge Monster Manual.

Have you ever tried this, changing the description on a standard monster, without changing anything else?
