Maybe turn this into a weekly or bi-weekly thing? Family adventure night. Sure, running for a 7 year old is going to be different than for kids your own age, but you can at least stay in practice.

I'm not sure. There will definitely be more in the future, but I think I'm going to have him roll up his own character using the Red Box set.
