I love templates, templates are great, but they are also an extra layer of work, pre-fab monsters save time.

Heh, what I would like for a MM book would be to have creatures sorted by type (first the aberrations, then the animals, then the constucts, the fey, etc.).

Great suggestion! What about a chapter for each type? It would make the MM a book instead of a catalog.

And after all, it's very easy to remember (or guess) which type a monster is, even if I haven't read MM many times.
