I like what some other people have said: two useless eyes (not none though.. that's kinda creepy) but blindsight sounds really kinad nifty.

11 eyes. One big cyclopean eye, and ten small eyes orbiting around the head on top of stalks. And each psionic power would be tied to one of these ten eyestalk.

wrinkle in time

there are blind creatures in A Wrinkle in Time whose various senses are very storng precisely because they cannot see. They don't even understand the concept of sight nor the need but they "see" better than most humans...

I vote two eyes or no eyes but blind!
