Undead?

Doesn't it have to say "as character class" under Advancement for a creature to be able to take a character class?

Or is that only listed if a creature has no other ways of Advancement?

Technically, all that's required is an Int of 3 or higher (or higher than 3, can't remember right now). If the creature doesn't list "as character class", then it's very unusual for them to advance that way, but still possible.

Technically, it would also be preferable if the creature has opposable thumbs, but as the celestial charger unicorn proves, even that isn't strictly necessary.
