Say I put an item in your bag of holding without your knowledge. Could you ever find it/get it out without turning the bag inside out and dumping everything out?

How about with a handy haversack?

Yes, why not? The inside of the bag is larger than the outside, but I see nothing in the description that says you can't rummage through it like a normal bag. It just says it takes longer, if the bag contains a lot of stuff. I see no rule about requiring specific knowledge in order to use a bag of holding.

Again, there's nothing to say that you can't use it if you don't know what's in it. If you do know what you're looking for, you get the advantage of retrieving it without provoking an AoO. If you're not looking for a specific item it acts as a bag of holding.

Here's the relevant part of the Handy Haversack description:

When the wearer reaches into it for a specific item, that item is always on top. Thus, no digging around and fumbling is ever necessary to find what a haversack contains. Retrieving any specific item from a haversack is a move action, but it does not provoke the attacks of opportunity that retrieving a stored item usually does.
Note that it describes the advantage if you are retrieving a specific item, but doesn't mention any disadvantage otherwise.
