Do it! Seriously, if she has an art history degree...she will be in 7th heaven. We barely scratched the surface in our short visit, but almost every nook and cranny little church, gallery or museum is loaded with important works.
One suggestion I would make is to go a bit later in the year than we did, since the crowds at the major sites were still ridiculous (at least in Florence). Going in Oct before they change over to Daylight Savings time would be better, instead of mid-September. That and pre-book your tickets to the major sites. We ended up not getting into the Uffizi because the line was too long and we really wanted to hit the Galleria dell'Accademia to see the David.
If you prebook the tickets, you bypass all the crowds and go right to the head of the line...passing all the schlubs like us

A nice side bonus is that being in Italy is great for the love life...something about world classics and good wine
