What are traits considered?

For example Angels have certain traits, like immunities and whatnot that do not have extraordinary, supernatural or spell like descriptors. Are these considered (Ex), (Su) or (Sp)? Does this include DR? The reason I ask is because I am curious what happens if you polymorph or shapechange into one of these creatures.

They are none of the above, they are "basic physical characteristics". If you polymorph or shapechange you get all those traits. Note that in 3.5 you can't polymorph into an outsider, even if you are one.

Polymorph states "The new form may be of the same type as the subject or any of the following types: aberration, animal, dragon, fey, giant, humanoid, magical beast, monstrous humanoid, ooze, plant, or vermin."

Polymorph can only change an outsider into an outsider. No one else could be turned into an outsider.

However, if you shapechange into a certain type of creature, you could gain it's abilities. Shapechange is actually a pretty powerful spell if you choose the right forms.

A wee bit ambiguous. Seems to indicate that an outsider can only be polymorphed into an outsider, and not anything else. Presumably you meant 'Polymorph can't change anything into an outsider, unless the target is already an outsider'.

Or "Only outsiders can be changed into outsiders by Polymorph."
