I generally use a somewhat standard configuration as per the first part of the OP's post. Sometimes I'll stick in reincarnation there.
Some variants I've done are:
1. Used the Egyptian (and others) idea of the soul being made of many parts, each of which may have a different use or destination.
2. Used the idea that nothing has a soul until it earns one, usually though deeds or some great work (though 'great work' could be as simple as dutifully caring for an aging parent). Some beings with a great destiny are born with souls; those people usually become adventurers or great heroes. Most people go though life without developing one, and their spiritual essense just blends back into a great river of life.
