Prince Valiant - in my view this is Greg Stafford's masterpiece (better than Pendragon).
Maelstrom Storytelling and/or HeroWars - these are the two classic systems based around free descriptor PC builds, and scene-based conflict resolution.
Burning Wheel and Classic Traveller have both already been mentioned.
The Dying Earth (Robin Laws's version) hasn't been, I don't think - it's niche but pretty well done.
