I finished the sequel, worth it for story, but agreed it didnt hit as hard as the 1st.
It is probably a "me" thing: I tend to like one and done experiences, so I can try something new. it does not mean that HZD2 is not as good or better than 2, just that I don't need that experience again. That could be why I also bounced off OW2: been there, done that.

Every once in a while a series is so good it defies that tendency in me. Best examples are FO3/NV/FO4, and the Uncharted series.
 


It is a shame, since they really fit the bill of what you are looking for: like Skyrim with less build stuff, very minimal story (you can effectively ignore the story and play for hundreds of hours.
At this point I am trying to see if there is a wabbajack modlist for Skyrim SE that gives me what I am looking for without making me slof through the same old Skyrim.
 


Love this game. one of the first games in a very long time that I actually finished. I started the sequel when it first came out but bounced off for some reason.
Have you played Ghost of Tsushima? It does have a similarly large-scale open world experience, though you do need to go through a few specific quests early on to unlock some of your main abilities. Once that's done, though, there's plenty to explore in the wider world, and no need to engage with the main quests until you feel like it.
