It is probably a "me" thing: I tend to like one and done experiences, so I can try something new. it does not mean that HZD2 is not as good or better than 2, just that I don't need that experience again. It is a shame, since they really fit the bill of what you are looking for: like Skyrim with less build stuff, very minimal story (you can effectively ignore the story and play for hundreds of hours.I really want to try those but alas I do not own a Switch. If only Nintendo released those for PC.

Have you played Ghost of Tsushima? It does have a similarly large-scale open world experience, though you do need to go through a few specific quests early on to unlock some of your main abilities. Once that's done, though, there's plenty to explore in the wider world, and no need to engage with the main quests until you feel like it.Love this game. one of the first games in a very long time that I actually finished.
