What's the most utilitarian CR<=1 monster?

Relics and Rituals II has a spell 'Summon Specific Monster'.

The level 0 version of this spell will call a creature of CR <= 1 for one hour.

So I'm trying to figure out what, from these sources:

Monster Manual
Fiend Folio
Monsters of Faerun
Creature Collections I and II
Tome of Horrors
Dangerous Denizons

makes for the creature with the greatest variety in potential uses.

A Skeleton can do all a human can (except maybe in social settings), plus be on guard duty 24/7 (ok, that's not so important since the duration is only 1 hour) and double as a hat stand.

Other than that, the infamous blind kobold has a zillion of (ab)uses!

But that´s it.
A three krin is a good choice for fighting, if lemure is a good blocker (DR !)
a shark rulez in an underwater setting
eagle is a good scout
mule is a good beast of burden

it really depends on your demands.
