i remember a large assortment of of different beholders and beholder kin in past editions. does anyone know where i can find the different beholder species in 3.5 books?

This. Though, looking at the pictures, I don't think that the Beholder with legs appears in 3.x. Most of the others could be explained away with the variance of standard Beholders - no two are exactly alike, as stated by Lords of Madness. The more exotic varieties can be found within the books Rumbletiger mentioned.
