I generally let people roll their own checks. If they're being ambushed, it's not giving anything away to say "roll a spot check." If I rolled it for them, I'd be saying "you're surprised." And it would amount to the same thing.
When asking a PC to roll a check would give away that there's something to look for (for example, an elf rolling to see a secret door by walking past it), I roll it secretly. Sometimes, if I know I'll need a number of rolls, I ask the players to roll 6 will saves or whatever it is I need a the beginning of the session, write those down and use them when they come up.
