Well, depends on the char. I have one who is all about Ride, another Knowledge (all) and numerous built on Hide/MS. Guess those four are my favored ones.

Overall utility? Listen.

Not sure if I have a favorite, really depends on the character. I tend to throw a decent number of points to Listen usually. I also enjoy a good craft or knowledge skill depending on what is more applicable to the character I am working on.
