So how does one pronounce Eberron?

With a rolling Spanish R. Just to be contrary, yet still within the ambiguous rules of English pronunciation.

Well,

Under conventional English usage it would be pronounced EE-ber-ron. Which is apparently how the WotC folk pronounce it according to an earlier poster. But I'm Canadian so I choose to pronounce it EH-ber-ron.

P.S. Was that too subtle?

Yes, I think so. I have a damned degree in English, and I've never thought to pronounce it with a long E.
