I'm surprised that no one has mentioned the KNIGHT'S TALE soundtrack, which has a lot of authentic medieval music in it.

I particularly like "We Will Rock You" which, as I understand it, was actually written by the queen of England!

There are several collections of Celtic-style folk music published by Putumayo World Music that are great.

Lots of collections of old sea shanties are available on cd too. Great tavern stuff.
