And here I am with both a waffle maker and a griddle I use almost exclusively for pancakes. I feel so fancy!
I mean you do you. To me, having spent most my life in homes overcrowded with too many possessions, appliances whose only purpose is to have the same flavor profile of food in a different shape are kind of top of the list for things to not own.

Personally I find it's entirely about how often I use something. Having too many possessions is really mainly a thing when:

A) You don't have enough space (esp. to put them away properly)

and

B) You don't actually use them at all often.

If you have a bizarre specialist device but like, use it multiple times per week (or at least month), that's probably justifiable. I have a milk frother for example, but I use it like 2x a day on average making coffees. Whereas for a lot of people it would sit there gathering dust for months or years.

I mean, fair enough.

Really all I'm getting at is that I believe various waffle making devices very frequently fall in the "seems nice to have, but rarely actually gets used" category of things that frequently gum up people's kitchen cabinets, and of such things seem like they add very little that can't be achieved without them. They have the added danger of being in the affordable gift range, so are likely to be given to a known waffle enjoyer seen lacking one.

Upon reflection, I may have just acquired a habit of always tempering my praise for waffles with commentary on how unnecessary and silly they and the devices that make them are to fend off the danger of being gifted a waffle maker (that I would then use... maybe three times a year) by one or another family members.

Maybe I've never had a good pancake (and I've tried them at a lot of restuarants), but I really don't like them. I enjoy waffles, but French Toast are easy to make, use up leftover bread and eggs, and when made correctly (are more like a custard type taste and feel in the middle) are almost like a dessert rather than normal food.
